  1. Have you ever wondered who posts some of this stuff that you come across? Recently it seems to have become an epidemic, except that recently it seems to have become better. Do you agree?

  2. I love pinto beans… it reminds me of my childhood. My mother always cooked them from dry beans but I use canned… just as good to me and way easier. I usually cook up 3-4 cans in my slow cooker for about 4 hours and I have a lot to use many different ways. The canned beans seem to need a lot of salt some how….. I’m one of the lucky ones… my sodium levels run on the low side.

  3. Fritatta! = Cheesy scrambled eggs with cooked vegetables added. I don’t even bother to put it in the oven, as fritatta recipes call for. Usually serve it with a carb and fruit.

    The really great news is that even the kids really like it. Win-win!

    my fast dinners are breakfast, pasta and salad or sandwiches. I have chickens, so I always have fresh eggs. I also have bacon cooked ahead, layered between paper towels in zip-lock bags. I normally have some type of bread so toast or sandwiches are an option. I love soft-boiled eggs. When you raise chickens and feed them well, the taste and quality of their eggs is incredible. I have a greenhouse and garden, so tomatoes and fresh herbs are available half the year.
    A friend of mine shared a quick recipe for a type of noodle bowl. It’s quick and you can use chicken or shrimp or leftover pork or sliced steak strips. She uses a cabbage slaw or kale salad and makes a Asian sauce to top it. Love the different flavor combos!

  5. I like to use tortillas for burritos too. I also have another item I make with them and that is mini thin crust pizzas. I crisp the the tortillas in an ungreased non stick skillet, being careful not to scorch them. Then I spread pizza sauce on them, some good melty cheese, a few pepperonis, and/or some sliced black olives. The tortillas make a perfect thin crust for our little homemade pizzas. I put them in a 400 degree oven just until the cheese is melted and they are so good and fresh and inexpensive to make, and really don’t take long to make.

  7. Bean burritos are yummy, but I can’t digest all those beans. So instead, I have to use beans sparingly in dishes such as soups and chili. I made a pot of minestrone soup the other day and added just one can of beans to the entire pot.

    Quesadillas are great for another quick meal (you can use corn torillas if you’re GF) and you can layer on any leftover meat, onions, peppers or even baby spinach.

    Scrambled eggs with veggies mixed in and a side of roasted potatoes is another good, quick meal. We had that the other night for dinner.

  8. I always have the Mission flour tortillas on hand too. I like to make chicken and shaved steak quesadillas and I also just like to put pepperoni and either pepper jack or cheddar cheese in them. I also like to have sliced peppers with the pepperoni one! I think I will try your recipe Brenda it sounds very good!

  9. My favorite soup is Black Bean. I carton of chicken broth, 2 cans of rinsed black beans, 1 jar of salsa. Heat through and I like to blend it with my stick blender to make it like a cream soup. Top with a little shredded cheese and a bit of sour cream. Fast, cheap, easy.

    1. Sounds good. Will have to tr this. I couldn’t add that much salsa though. I would have reflux all night.

  11. Well, these sound absolutely yummy! Something I must try very soon. Like you, I keep soft flour tortillas on hand, as well.

    My go to meal with the flour tortillas is a quesadilla. I try to keep cooked chicken on hand. I’ll take some time a couple of times a month to roast some chicken (I prefer dark meat so it’s usually a handful of thighs). I remove the meat from the bones and freeze small portions in ziplock snack size bags. When I want a quick meal with little fuss I make a quesadilla with shredded mozzarella and Mexican blend cheeses. I will occasionally purchase a package of individual (six in a box) containers of guacamole. For a nice snack I’ll spread some guacamole and salsa on two warm flour tortillas then roll up or fold over the tortillas. Yummy snack. As an aside I also use the packages of chicken to add to a rice or pasta side, a salad, a small chicken salad for either a sandwich or to stuff in a tomato, ramen noodles (I love the chili flavored ones LOL).       1. I have a friend who does some of the same things I do and prefers to use white meat.
