I moved the Breville smart oven before I did laundry last night. I decided it’s really too heavy to move each time.

Plus the Breville, which I’ve used extensively, has been acting a little hinky lately. I’m hoping it’s not going out, because it’s kind of expensive. And I really do love it.
  
If you look closely, you can see what I picked up at the antique mall earlier in the week. Three vintage jars. 

They were a couple of bucks apiece. I just love vintage jars. So many things you can do with them. At three for less than $10, I thought the price was too good to pass up.

I made taco soup in my electric skillet. I will eat it for a few days, then freeze in individual baggies for quick meals.

Sometimes I make cornbread to have with it. On this day, I threw some Fritos in and topped with cheddar cheese. Yum!

Taco soup is a quick meal. Ground beef, various cans of beans, one can whole kernel corn, taco seasoning packet, Ranch dressing packet (I use half of each packet) and a can of Rotel. 

Some people like to make their own seasoning, and I think I might do that next time. I think the original recipe had additional cut up tomatoes, but I don’t add that. 

This time for beans, I added a couple cans of pinto beans, black beans and navy beans. Use as much as you desire.

Just cook the ground beef. Add the beans, corn, seasonings and Ro-tel. I let it simmer for about 15 minutes. I used to make it in my crock pot, but it’s faster just adding everything to the cooked ground beef.

  1. Brenda, that sounds and looks delicious! I can almost smell it looking at the photos! And it does sound really easy. I am definitely in favor of "easy" when it comes to fixing food! Cooking is not my favorite thing to do.

    I noticed that you've switched the little quilt to a different one above your little shelf unit. Looking at it again as I was writing this I tho't maybe I was wrong. But didn't the other one have more colors? Guess I'll just have to go back and look at the other posting!

  2. I had to laugh at this BECAUSE today my DIL posted on FB : She and grandson Brent ) he does not start school until Monday ) met her twin and a friend at a Mexican restaurant for lunch.

    Brent : orders a taco / says he loves tacos

    Eats the middle only. She asks what is he doing?

    He informs her that he doesn't like the actual taco, just the middle 🙂

  3. Until recently, it was impossible to find taco seasoning in France. I would bring home packets from the U.S., but usually I just do it from scratch. The main ingredients are oregano and cumin. So easy. Maybe some chipotle or Anaheim chili (just a little) to add a tiny kick and a smoky flavor. The best part about doing it from scratch is that you don't eat all those nasty chemicals that keep the mix from spoiling for two years. And you can control the amount of salt.
    My go-to meal is probably a quinoa salad with chopped up vegetables–whatever is in the fridge.

  4. Right now there are some pork ribs in my crockpot along with apples, onions, and cabbage. I added some peppercorns and a bay leaf. I'll put a dab of horseradish on mine at suppertime, but my husband will use spicy mustard. We'll also have a side salad and some bread made this morning in the bread machine. The cooler weather has gotten me in the mood for this kind this kind of meal. Your soup looks tasty.

  5. I've never had taco soup! Looks good. I don't really have a go to meal, although in the winter I could eat beef stew (made in the crock pot) every single day!

  6. I love stews, even in the summer. Instead of adding meat I put in a tin of beans with onions, mushrooms and carrots and a stock cube for the gravy thickened with cornstarch, I serve this with broccoli and cauliflower. If I have time or feel in the mood I will make some biscuits to go with it.

  7. That was the right move . . .you don't need the aggravation of moving the oven repeatedly and quite honestly, it is not good for the oven either.Looks good and functional in it's new location.Want to try the Taco soup recipe

  8. I love your little corner!! Did you know that if you wanted little legs on the bottom of your red cabinet that Lowes or Home Depot (and probably other hardware stores) sell little legs that screw on. I love to take a bonless chicken breast and flatten it and sprinkle salt and pepper over it. Mix together 1/3 cup of mayonaise and parmesean cheese and spread that over the chicken. Bake in a 425 oven for 20 minutes. Yummy

  9. I wrote down your taco soup recipe – easy and sounds delicious! I don't have a favorite and don't often have leftovers because of the number of people I feed, but a really easy crock pot shredded chicken recipe I like – a shredded tasty chicken that can be served with any side or put in a bun as a delicious sandwich is as follows:

    Mix 12 oz of your favorite BBQ sauce, 1/2 cup italian salad dressing and 1/4 cup brown sugar. Put that mixture over 6 frozen chicken breasts in a crock pot. Leave in the crock pot on high for four hours and then pull the chicken apart with two forks. Delicious on a bun or with sides.

  10. We love taco soup! I've been making it for years. In fact, I think I've made it so much the troops might rebel. 🙂

    We love to put Ranch Style beans in ours. They add a delicious, hearty flavor. You are making me want a little winter food!
