When I need a fast and easy meal, I’ll often make a couple of Brenda’s Basic Bean Burritos via my own recipe.
Sometimes I will have cooked beans in the crock pot. If not, I’ll just get a can of beans from my pantry.
Brenda’s Basic Bean Burritos Ingredients:
- Soft flour tortillas
- Beans (homemade or canned)
- Sour cream
- Shredded cheese
Warm the soft flour tortillas (or whatever kind you prefer) on a plate in the microwave.
After it’s warmed, smear a bit of sour cream on the tortilla with a knife.
Roll the tortilla up with your chosen ingredients and microwave until the cheese inside is melting.
How I Make Mine:
I add a couple of spoonfuls of seasoned beans with onions to my warmed flour tortilla.
After that I add a spoonful of my favorite salsa. I top it off with shredded Pepper Jack cheese. I prefer shredded Pepper Jack cheese or Mexican cheese.
I roll the tortilla up with the ingredients inside. Then I microwave until the cheese inside the burrito is starting to melt. (A minute or less usually).
I top it with a bit of salsa and it’s ready to eat.
Usually I’ll have restaurant-style tortilla chips with my burrito.
These easy bean burritos take less than 10 minutes to put together.
This is a simple and plain meal that is very cheap and easy to make. You might even have the ingredients on hand in your pantry and refrigerator.
Beans Are Nutritious:
Beans may be nature’s perfect food. They are a unique combo of plant protein and fiber. At the same time, beans contain little, if any, saturated fat, and they are cholesterol-free. Plus they are cheap.
As a child I typically ate various types of beans every single day. We ate our meals from what we grew in the garden.
Eating beans, including canned beans, every day is one of the best things you can do to help increase nutrients. They substantially improve the quality of your diet.
