Preparing Healthy Jar Salad Meals

Yesterday, I prepared several healthy jar salad meals. I’d been reading about this concept for pre-prepared meals and decided that I wanted to try it.
I made myself a big salad in a bowl, and layered the rest in two jars to put in the refrigerator.

The Ingredients I Chose for My Salad:
Last week, my dentist prescribed a steroid pack to reduce inflammation in my mouth from my recent root canal. It also helped reduce inflammation in my joints due to arthritis.
I felt great for a few days and wondered how I could manage inflammation through diet.
So I got to reading and found that kidney beans are highly anti-inflammatory. So are many vegetables. When I placed my Walmart grocery order, I selected foods that would help reduce inflammation.
The salad I prepared included spinach, lettuce, tomatoes, carrots, cucumbers, red onion, mushrooms, corn, and kidney beans. I added blue cheese crumbles on top, along with tortilla strips, and ground flaxseed.
I had read that the best beans for reducing inflammation are deeply pigmented varieties. These include black beans, red kidney beans, and chickpeas. I ordered red kidney beans and chickpeas, and already have black beans.
In addition, flaxseed is said to help with inflammation. So I also ordered ground flaxseed.

It can be helpful if you want to keep nuts and seeds or croutons separate to stay crunchy. It fits snuggly and you can just screw on the lid as usual.
What a neat idea! I sometimes have leftover salad from our dinner the night before and eat it for my lunch. Maybe if I made a couple of jar salads while I’m making our dinner I would actually eat salad for lunch more often.
