Doctor Visit & Things I’ll Be Cooking

I had my doctor visit yesterday and my regular lab work done. She told me she was glad I am staying in.

Did you know that COVID-19 has now killed about as many Americans as the 1918-19 Spanish flu pandemic did — approximately 675,000.

Who could have imagined such a thing? And in this modern era?

Though I’ve had two Moderna vaccines, the variant has thrown us a curve ball.

It is now the predominant SARS CoV-2 variant that is accounting for more than 99% of COVID-19 cases. And leading to an overwhelming increase in hospitalizations in some states.

Scientists are saying that people who are fully vaccinated against the coronavirus continue to have strong protection against COVID-19 compared to those who aren’t.

But there have been enough questions to lead the Centers for Disease Control and Prevention (CDC) to advise additional precautions, including mask guidelines regardless of vaccination status.

At least now Pfizer has come up with a vaccine for younger children now, ages 5 to 11.

What I’m Cooking:

I think today I’m going to cook one of those sheet pan dinners of Italian sausage, small potatoes and green beans. It is not a Keto recipe.

That will make a full meal. And probably lots of leftovers.

I’m not planning to only eat Keto recipes. The only thing that got me on that path was that I saw some recipes I liked the looks of and they just happened to be Keto.

I will cook whatever is easy and nutritious.

I think I might make this one soon. Crustless pizza. Here is the recipe.

I don’t mind at all not having crust on pizza or quiche, as I don’t really even like the crust.

I watched the first episode of “Billions” last night.

Billions:

“Billions” is a fictional account of the dynamic world of hedge funds. It was created by financial journalist Andrew Ross Sorkin and the writers of “Rounders,” Brian Koppelman and David Levien.

“Billions,” which premiered on Showtime in 2016, stars Paul Giamatti as a high-profile U.S. attorney with an 81-consecutive conviction streak.

Damien Lewis plays Bobby “Axe” Axelrod, a revered hedge fund manager. He was the sole survivor of his firm after the terrorist attacks on Sept. 11, 2001.

  1. Although I’m not a fan of cooking, I do love making soups for fall and winter. I feel satisfied after a bowl of soup and a salad, or sometimes a piece bread. Plus, there’s always some for leftovers.
    It’s great news about Pfizer being approved for kids. It’s horrifying that we are still averaging about 1900 deaths per day in the country,

  2. I don’t mind quiche recipes without crust either. Or, you can make an omelet or frittata. Now with pizza…I gotta have the crust!

    Cooler weather hit us today (we were at 90 for a long time; dipped all the way down into the 60’s today and it felt good, though not ready for such a big change that quickly) and so I made Ina Garten’s pot roast recipe, mashed potatoes and roasted veggies. I was in the kitchen for hours and ran the dishwasher three times, but I didn’t mind – it was a good day to spend cooking and being a homebody.

    My husband and I are both vaxxed but we still wear our masks in public and social distance as much as possible. We don’t have any underlying conditions, but with this Delta variant, we feel we can’t be too cautious.

  3. Brenda, your home is looking better than ever before.
    There are break through cases of COVID. This is when people have been vaccinated and have given the virus to others. Here is Texas many of the ICU’s are full with young children. They did not get COVID earlier in the pandemic. The adults getting it do not have to go to the hospital if they get treatment early. The death rate is also down for those with the vaccinations. Since I have meet so many of the criteria for boosters and my COVID vaccinations were six months ago, I will be one of the first to have a booster shot when those are approved. Last week I had a reminder from my primary care doctor that it is time to have my flu shot. We are so fortunate to have good health care.
    Your blog is so much easier to read lately.

  4. I have been enjoying many sheet pan meals. So easy to mix different vegetables and meats on one pan for a good variety and easy clean up. I’m on very low sodium so different textures and flavors help me not miss the salt as much.
    I so enjoy reading your blog.

  5. Soups are the 😋 best!! Filling and perfect nutrition with veggies & coconut milk. Or if you do not like the flavors, substitute with something else. 1/2 sandwich is also good with a big bowl of soup. A dessert can be an easy fruit cobbler. Lots of fall food items to try! Especially after so much take out meals.

  6. I have a small roast with new potatoes, baby carrots, and onion in the oven for supper. Sprinkled a little dry onion soup mix over the top and I can smell it already. Going to bake cranberry, white choc chip, oatmeal cookies later. It is cool today and a great relief. I have had two covid vaccines plus the booster. I am a heart patient and take extra precaution, still wearing a mask when I go out. My friend who had an underlying condition, even though she had both vaccines, got the covid and died. You can’t be too cautious!

    I.am a “red” lady but fine red rush s are hard to find. Mostly because the red is.not true red. Help!

    1. If you mean where did I get them: The white dishes I’ve had for some years. They came from Target.com The transferware plates I bought off Etsy I believe. The rose plates in the middle were gifted to me by one of my readers years ago.

  8. I am looking forward to making soups, stews, and roasts! I love the nice aromas coming from the crockpot and oven! I’m not a fan of pineapple on pizza! In the county that I live in, we have the most cases of the Delta Covid in our state! Our governor preaches every day about wearing masks,having vaccines, and yet he went to a tailgating party without a mask! I just cannot figure people out!

    1. The reason I mentioned I didn’t like pineapple on pizza, was because I looked up the recipe for the crustless pizza casserole and they mentioned pineapple as a topping!
