Meatloaf Dinner

I put together a meatloaf for dinner and cooked it on Friday evening.

It’s sometimes comical the lengths I must go to these days in order to get food prepared. I started early in the day so I could rest while the already prepared uncooked meatloaf sat in the refrigerator.

Preparing the Meatloaf:

I put all the ingredients on the counter and sat down on the walker/rollator. Then I put it together and put it in the glass loaf pan.

Then I realized that I’d thrown in the brown sugar for the glaze instead of the breadcrumbs, so my meatloaf was a little sweet. I added the breadcrumbs anyway and just added a little more of the liquid ingredients.

And I also forgot to add the Worcestershire sauce after I had already squished the uncooked meatloaf into a loaf pan. So, in doubt as to what to do, I squirted some on top and poked it in with my finger!

Here is the recipe I used. Normally, I just add what I recall goes into a meatloaf and call it a day. But this time I followed a recipe. Well, except for the mistakes I made.

I chopped potatoes, carrots, and the remainder of that onion I used in the meatloaf, and roasted them. Green beans completed the meal. It was very tasty, so maybe adding the brown sugar to the meatloaf wasn’t a bad idea after all.

Home-cooked Meals:

I applied ice packs to my back, neck, knees, and ankle for a while to loosen up. Then, as soon as I got the uncooked meatloaf in the refrigerator, sat down and applied them again.

There was a time when I stood and prepared meals and baked bread, etc. But it’s been so long I can’t even remember it! It’s far in the rearview mirror now.

But home-cooked meals are so delicious! I don’t want to order TV dinners.

I want to have good meals that will last more than a day and then warm up leftovers. I’m so happy when I know there are leftovers in the refrigerator and all I have to do is warm them up!

I managed to get five meals out of that bean-and-cheese enchilada casserole I made last week.

What Kendra is Working On:

Kendra is working on a house that she says is the worst she’s ever tackled. She’s doing it as a favor to a family experiencing difficulties. They haven’t been able to cook in their kitchen for five years.

The wife is developmentally disabled, and the husband is out of state in a cancer center. He’s going to be allowed to come home for a spell, but his immune system is shot. So he can’t go in there if the house is still in the shape she found it in.

They’re in a race to get the place presentable. There are three kids who are apparently out of control and just throw trash on the floor.

Kendra said it was the most disgusting thing she’s ever seen. And that’s saying a lot, since she bought another hoarder house a few weeks ago. And let me tell you, the photos of it are mind-boggling.

She said she comes home through the garage, takes off her clothes, then rushes into the shower. And she said she still doesn’t feel clean after a long, hot shower.

How do people end up in this kind of mess? If I had to crawl, I think I’d still somehow manage to wash my dishes at the sink and be as independent as I could. But I’m not here to judge them. Because I haven’t walked in their shoes.

Books I’ve Been Reading:

I finished reading one book, The Crossroads, and am now reading the latest by Simone St. James. It’s called A Box Full of Darkness. I reviewed The Crossroads the other day.

I can sometimes get these books free from the publishers or publicists if I email them and say I’ll review them. So, since money is an issue right now, that’s how I’m getting some of the books I’ve been reading lately.

What I’m Watching:

David Tennant and Olivia Colman in Broadchurch.

I’m watching Broadchurch on Netflix, though I’ve watched it before, even the American version. I like the version made in England best. It stars David Tennant and Olivia Colman.

After a young boy is murdered in the small seaside town of Broadchurch, local detectives Ellie Miller and Alec Hardy are assigned the mysterious case. The boy was found on the beach, with no clues as to how he got there.

The small Dorset community becomes the focus of a police investigation and media madness. Out-of-town Detective Inspector Alec Hardy gets the point position over Detective Sgt. Ellie Miller, who feels the job should have been hers. Now she must engage in an efficient working relationship with taciturn Hardy.

Slowly, more members of the Broadchurch community are drawn into the investigation. A telephone engineer drew considerable attention when he admitted to a special connection to the case.

While dealing with so much unwelcome attention, Danny’s family tries to cope with its grief. When a suspect is named and charged, the ensuing trial sees the defendant promising to expose more of the townspeople’s secrets.

    We love making sandwiches out of leftover meatloaf or slicing leftovers and frying up nicely in a pan and then some eggs makes a good breakfast or meal too. I like to put some smaller potatoes to bake alongside the meatloaf in the oven as there is room for such and so many ways to use leftover baked potatoes too.

  7. It’s good that you’re making yourself meals that you can eat for several days. Sometimes I get tired of cooking but I shouldn’t complain after reading what you have to go through due to your pain. I should also be grateful for a wonderful husband and son to cook for. And…our son does cook twice/week on his days off so that does help me out. (Sometimes I need a more positive perspective!)

    That is so sad about the family Kendra is helping out. She is so kind to do so. I’m not surprised the kids are out of control with their dad being critically ill and gone, and then their mother being mentally disabled. They don’t have any structure or stability. Wonder if there’s any family members nearby…why aren’t they helping?

    Bless your daughter for helping those poor people…I hope with time she might be able to get those kids to help out!!! Some have it worse than do we, don’t they?
    I am with you…LOVE having leftovers in the fridge. Some days I just do not feel like cooking…part of it is deciding WHAT to fix. I have so many allergies…and sometimes Hubby does not want what I can eat. I have found 2 things so far that are decent in the frozen section of the grocery stores here (if we had a Trader Joe’s it might be better). I am picky about the food we eat cause we already have enough health issues and I want no more. So there are pot pies made by Blake’s…I cannot eat them as they have tapioca in them or wheat. He can eat both gluten free or with gluten so I get him some of both…and he never complains about them. I bake them in the little toaster oven as I almost never microwave anything (not healthy in my opinion plus the pies need the oven to have a nice brown crisp crust). Then Caulipower pizzas which are glutenfree too. Just the tomato based one and I add toppings and more cheese and he loves them. Eat half the pizza the first night and next morning he eats leftovers cold…does NOT want it warmed…says cold pizza is the best. Works for me. I continue hunting tho online for ideas of other frozen products to try out. For him at least…as it then just makes 1 meal for me to fix…for me. I do freeze leftovers when I can. I make a yummy sweet and sour beef stew…just hunt for good deals on any kind of beef steak, small roast etc that I can cut up…or sometimes I find good meat already cut and ready to cook. I also cannot eat it, but have tasted and its wonderful. I have begun adding grated whole zucchini to meatballs (then do not need any bread, cracker etc added). Grate on paper towel and let drain for a bit before adding to meat. Then we always have meatballs left to freeze for later. That way, if I do not feel like making a veggie to go with the meatballs, at least we have zucchini…sometimes add some finely grated carrots and onions too…so at least it saves some work. I have used the meatballs in several ways, but they are quite good in making Swedish Meatballs…you cannot taste the zucchini…just see the flecks of green. I make instant mashed potatoes from Bobs Red Mill…they are 100% potato…make the gravy and it is also a yummy meal. I make gravy using glutenfree flours and almond milk…works great. (I get the almond milk that is shelf stable as we use very little milk and thus can always keep some on hand and not run out). A little jar of the lignonberry jam in fridge is nice to have a tablespoonful on side with this meal too. You are smart to work smarter, rather than harder, Brenda. ANYTHING we can do at this stage of life, to make it where we can stay independent is good.

        I get them here at Food Lion, but looks like that store is not near you. Walmart might carry them? I have not yet gotten started ordering groceries…maybe one of these days. Here, often whenever I buy one of them, the register spits out a $2 off coupon. Once I got a coupon for saving on 7 of the pizzas…had to let that one go cause not enough room in the freezers I have. These are glutenfree…there might be ones that are wheat…not sure.
