Those recipes sound scrumptious, they look scrumptious! I’m not much of a cook and I don’t entertain like I did before I retired so I don’t get inventive for myself. I can’t eat most of the spices in a lot of recipes, they give me heartburn and burps. My summer diet is generally lighter foods. Every now and then if its a cool day or raining outside, I may make a Cheeseburger Casserole or a Shepherd’s Pie because I can freeze the left-overs in single serving containers or I’ll throw a couple of White Castle frozen sliders in the microwave. I have a protein rich breakfast in the morning with my single cup of coffee for the day, but splurge on using half and half creamer and whole milk to make a cafe latte. For my second meal of the day I may have a salad of baby spinach, tomato and cucumber with a dollop of mayonnaise or thousand island dressing, or a cucumber and tomato sandwich on 12 grain toast; sometimes a quick tuna and mayo sandwich on 12 grain bread with a slice of Swiss cheese, sometimes a “Smart Ones” quick microwave meal or a fried egg sandwich. Nothing fancy. In the summer I usually have a dark chocolate ice cream bar every day, and when it’s very hot and muggy outside I may have two. I have my one glass of wine in the evening, or sometimes 2 if it’s been “one of those days.”

So many fabulous recipes to enjoy. I love to experiment with different fruits and veggies in salads. I make salads with a lettuce, baby spinach or pasta base. I have a tendency to overbuy, and things spoil before I can use them. Since strawberries are plentiful right now, I’m anxious to try a pasta salad loaded with strawberries. And I use granny smith apples for the crunch and tartness. Of course, a little feta cheese and pecans or walnuts are yummy in any salad. I’m starting to ramble. LOL
Wait, don’t forget to add chicken or salad shrimp. LOL
