If you love crispy-skinned, fluffy baked potatoes but donโt want to heat your whole kitchen with a full-size oven, your convection countertop oven is the perfect solution.
Baking potatoes in a convection oven is faster, more energy-efficient, and delivers restaurant-quality results right at home.

Baking potatoes in a convection countertop oven is quick, easy, and delivers the perfect combination of crispy skin and soft, fluffy centers. Whether youโre making a side dish for dinner or prepping a meal in your RV, your countertop convection oven makes it efficient and straightforward.
Why Use a Convection Countertop Oven for Baking Potatoes?
Convection ovens circulate hot air around the food, which means your potatoes cook more evenly and in less time than in a traditional oven. A countertop model makes it even easier since it preheats quickly and uses less electricity.
For one period of 8 years, I didn’t have a full-size stove, and I cooked everything in a convection oven on my kitchen countertop. I could easily do that again, as I rarely use the full-size oven I now have, and I’m cooking for one person.
Key benefits of convection-baked potatoes:
- Faster cooking time compared to conventional ovens
- Even baking for fluffy insides and crispy skins
- Energy savings by using a smaller appliance
- Convenient size for small kitchens, dorm rooms, or RVs
Step-by-Step Guide to Baking Potatoes in a Convection Oven
1. Choose the Right Potato
- Russet potatoes are the best choice for baking because of their starchy texture and thick skins.
- Yukon Golds or red potatoes will also work, but theyโll be creamier and less fluffy.
2. Wash and Prep
- Scrub the potatoes under running water to remove any dirt.
- Pat dry completely so that the skin will crisp up nicely.
- Pierce each potato 4โ5 times with a fork to allow steam to escape.
3. Season for Flavor
- Rub the skin with olive oil or melted butter for golden, crisp edges.
- Sprinkle with coarse salt (sea salt or kosher salt works best).
- Optional: Add garlic powder, black pepper, or herbs for extra seasoning.
4. Preheat Your Convection Countertop Oven
- Set the oven to 375ยฐF (190ยฐC).
- Since convection ovens run hotter, lowering the standard baking temperature by 25ยฐF prevents overcooking.
5. Bake the Potatoes
- Place the potatoes directly on the oven rack or on a wire baking tray for best airflow.
- Bake for 40โ50 minutes, depending on potato size.
- Potatoes are done when a fork or knife slides in easily to the center.
6. Serve and Enjoy
- Slice open the potato and fluff with a fork.
- Add toppings like butter, sour cream, shredded cheese, bacon bits, steamed broccoli, or chili for a hearty meal.

How to Tell If a Baked Potato Is Done
- The internal temperature should reach 210ยฐF (99ยฐC).
- The skin should feel crispy, and the inside should be soft and fluffy.
- Gently squeeze the potato (using oven mitts!) โ if it gives easily, itโs ready.
Variations and Creative Toppings
Baked potatoes are incredibly versatile. Here are a few ideas:
- Classic: Butter, sour cream, shredded cheddar, and chives
- Tex-Mex: Salsa, guacamole, jalapeรฑos, and shredded cheese
- Loaded: Crispy bacon, cheddar, green onions, and ranch dressing
- Healthy: Steamed veggies with olive oil or Greek yogurt instead of sour cream
- Comfort Food: Top with leftover chili, pulled pork, or BBQ chicken
Tips for the Best Baked Potatoes in a Countertop Oven
- Donโt wrap in foil if you want a crisp skin โ foil traps moisture. (I never use foil)
- For faster results, start the potato in the microwave for 5 minutes, then finish baking in the convection oven for 20โ25 minutes.
- If baking multiple potatoes, leave space between them for proper air circulation.
- Want extra crunch? Brush the skin with olive oil again halfway through baking.
Frequently Asked Questions
How long does it take to bake a potato in a convection countertop oven?
About 40โ50 minutes at 375ยฐF, depending on the size.
Do I need to flip the potatoes?
Not necessary, but flipping halfway through can help with even browning.
Can I bake sweet potatoes the same way?
Yes! Sweet potatoes bake beautifully in a convection oven using the same method, though they may take slightly less time.
Tips for the Best Baked Potatoes in a Countertop Oven
- For extra crispy skin, skip the foil.
- If baking multiple potatoes, make sure theyโre spaced apart for proper air circulation.
- Add a drizzle of garlic-infused oil or herbs before baking for extra flavor.
Conclusion
Baked potatoes have tasted so much better since I started baking them in my convection countertop oven.
With this method, youโll never go back to microwaved potatoes again!

Garnish with butter, sour cream, yogurt, spices, or other condiments. I prefer butter, sour cream, and freshly snipped chives from my container garden.

Your dinner looked so good to me, that I looked up and pinned that tuna casserole recipe. When I have time, I do like to bake my potatoes, too, instead of microwave. Gracie and Ivy’s antics are very entertaining!
Your dinner looks so good I want to run in and make it right now at 11:00 in the morning! I’ve been craving cornbread for the last week and I made a pot of pinto beans yesterday, so maybe I’ll fry up a tater and make that cornbread tonight. Don’t you think beans are always better after they’ve been in the fridge for a day or two? I tried a baked potato a different way a few days ago by cooking it in the microwave first and then putting it in my Cuisinart oven to crisp up the peeling. I thought it was pretty good, but there’s no doubt the texture of the potato is fluffier if you bake it from the start. The only thing I couldn’t do is the tuna casserole. I love tuna but the smell of it hot just sickens me, so no can do tuna casserole. Isn’t that strange? Since I live in the country I use propane which did not go down in price this fall as usual and it always rises as the winter goes on. The gas range that I’m so proud of will probably sit idle this winter while I do my cooking with my electric appliances. With the Cuisinart oven, a large griddle, an Instantpot, and 2 slowcookers I should have it covered haha. One of the few benefits of a larger house with storage galore. I also see myself using my little electric stove with the fireplace like yours more this year.
I’ve had good luck with HP computers and have stuck to them over the years. My latest was purchased two years ago and I love it. It’s super fast, great display, and has 1 terra byte of storage so I will never run out of space … ever! I keep up with the updates as they come and have installed Malwarebytes antivirus (and anti everything) software which keeps me safe from anything trying to attack my computer and notifies me when I’m trying to go to a website that they deem is unsafe. I purchased it online at Staples for a good price and just recently my husband purchased an almost identical one from them as well. Good luck with your search.
Apple laptops. I usually have mine for 5 years. One time, I accidentally washed the mac book in the washer (long story) let it dry out for a few days and it worked again. I had bought a 2015 mac book before the washing episode which I am currently using. The other mac is over 10 years old and despite the washing, still works altho due to its battery, it has to stay plugged in. It cannot be updated either due to its age.
That tuna casserole sounds good. When we were young and trying hard to stretch a penny(the few we had)…..a college friend of my hubs gave me a tuna cass recipes..and thinking it consisted of a box of mac and cheese, tuna fish canned, and maybe canned mushroom soup. It was easy, tasty ..and it lasted forever for the two of us. We ate it often and so I very much tired of it..lol… But this sounds like a keto one would be good, easy and worth a good try. I love baked potatoes with butter and sour creme but have gotten lazy and usually microwave..the crispier outside is definitely a treat. One can never go wrong with cornbread..but for me that requires more butter, lol .. Looks like you are “cooking up” and eating yummi, Thanks for sharing..love the ideas, always. ps…I have a Chromebook that have had for I am thinking 3 or 4 years..and I love it; however, I am not as saavy as you..but may be worth the research as I think they have newer models since mine.
I’ve read that in multi-cat households, the cat who doesn’t cover their poop is doing this to show dominance to the other cat(s).
That tuna casserole really sounded good to me, so I printed it out and put tuna and gruyere cheese on my grocery list. I can’t wait.
I imagine that you could also make that casserole with the canned chicken. I also make my baked potaotes like that. I love the crispy outside. I use regular olive oil instead of a spray.
I had a Toshiba laptop that lasted me for a good 12 years! It still works but I opted for a newer one when I was having problems on it with Google. I now have a reburbished Dell Inspiron.. I think it’s a 2016 model and I love it. to save your touchpad on your current one, you could do what I do on my Dell.. I got a wireless mouse and wireless keyboard and just plugged in the little tiny thumb drive to run the moush and keyboard, and then I don’t have to use the laptop keyboard at all, or the touch pad (which I hate). I think this saves the laptop and keyboard, etc. I got this was 1 terrabyte of storage so I have thousands of pictures on it and still only half full. It’s super fast too. I think Dell has always made good products. I’m glad your kitties are playing more and interacting more. They are both so so pretty.
Yum on your dinner. I think Ivy might teach Gracie once they are better with each other she may see Ivy cover hers and learn that way. Have a great new week.
I have on occasion prepared baked potatoes in the toaster oven and they are indeed delicious. When I want a quicker meal I resort to using the microwave, of course the skin won’t be crisp but the potato will be soft. Simply put the potato inside a small plastic sandwich bag with a small amount of water (no need to seal the bag shut) and depending on the size of the potato microwave on high for six minutes or so. Other than the skin not being crispy the end results are in my opinion as tasty as those cooked for a longer time in an oven. My favorite topping is a couple of heaping tablespoons of creamed corn either with or without the added calories of sour cream or butter. Adding crumpled crispy bacon or bits of leftover ham and some shredded cheese makes for a quick, easy meal for someone who is as impatient as I am.
Yum! Your dinner looks so tasty. Now that we have Autumn weather, I am craving comfort foods.
I have macaroni & cheese, chicken and dumplings and bean soup with ham on my radar. My little 20 yr. old cat never has buried her poo. My youngest, now going on 3yrs. Was abandoned at 2 wks old and I bottle fed him and had to stimulate him to pee and poop, and clean him like the mama would have done. (No I did not lick him, I used warm wet paper towels! Lol!) Anyway, when he was old enough I had to teach him to use the litter box. I did such a good job with him, he goes around the house โburyingโ other things he finds and doesnโt like such as a knick knack, a sock on the floor, or food item he doesnโt like. Itโs hilarious watching him paw air over something to hide it. Cats are funny creatures. I am so glad Ivy now has a little sister to play with! Keep us posted on your computer search. I am in need of a laptop, my my needs for itโs use are simple compared to yours.
I havenโt a clue what to look for and since I am not computer savvy I fear getting ripped off. Have a good week. Eat some Candy- itโs Halloween!
Your supper sure looks good! Iโm like you, we donโt stick to the traditional special occasion dinners! For instance, we have Lasagna for Christmas dinner!
Your meal looks like comfort food…how appropriate these days!! Last night I made some bean soup and we had some grilled cheese sandwiches. Just right we felt. My recipes can change a bit depending on what I have on hand. Usually I just use black beans, but I only had 1 can, so I also used a can of small red beans too. I have made a notebook with just soup recipes in it. Now that we are older and as it gets colder weather, we want more soups. It is a good way to use a lot of veggies in a pleasant way. Glad the kitties keep you happy…they are never dull are they?
My Bella doesn’t cover either and like you said…STINKY!!!
Wal-Mart and Target both have an HP laptop in their ads this week, I’m in the club of knowing nothing about them, heard HP is a good brand.
Those cats are just adorable, they could be related, it’s generally never a dull moment here either!
Gracie is such a beautiful little kitten! her blue eyes and snow white fur and faint stripes on her tail. I recently read that they all have blue eyes when they’re born. but that the majority change by now. hers are apparently going to stay blue.
and Ivy is so beautiful also. I’m glad they have found a way to live together without fighting! I love the way you cook. and live. it’s simple and lovely. you appreciate the little things. good luck in finding your new laptop!
My cat never has learned to cover her business. She was less than 4 weeks old when she was rescued…and she is 11 now. But my clean the potty box game is on point for this reason!
I’m curious to know what computers you are researching and what you purchase next. Computers and cell phones are such a trial to me, but we need them both. It’s hard to make informed decisions when I really understand neither of them.
I think your dinner looks delcious. It looks real. xo Laura
